Water chestnut and bamboo cane drink

This is the simple yet refreshing drink that you might want for a hot and humid weather. To thirst our throat, I decided to make this for my family. HB loves it to bit and want me to make it again. I felt a sense of fulfilment.


Ingredients:
(Serves 6 glasses)

25 water chestnuts 马蹄
6 fresh bamboo canes 竹蔗
3000 ml water
Rock sugar to taste (I prefer yellow crystal rock sugar 黄晶冰糖)

Methods:
1.Water chestnuts - Wash, scrub and rinse. Use the side of a chopper or pestle to slightly pat the water chestnuts.
2.Bamboo canes - Wash, scrub and rinse. Cut into shorter lengths to able to fit into the pot. Use the side of a chopper or pestle to slightly break the bamboo canes.
3.In the pot, add in water, water chestnuts and bamboo canes and bring the water to boil. Reduce flames and simmer for about 1-1½ hours.
4.Add rock sugar to taste.
5.Discard bamboo canes. Retain water chestnuts for eating as they are crunchy and have natural sweetness.
6.Served warm or chilled.
